Yummy Vegan Chili

The Juice Laundry makes the most amazing chili. Yes, I have been trying to copy it and I think I’ve got it!! This comes together quickly and is incredibly nutritious and so yummy. I hope you like it as much as I do. Xooxox



Ingredients:

2-3 tablespoons olive oil (or water if oil free)

1 sweet onion diced

1 red bell pepper diced

1 stalk celery chopped

1 medium to large carrot diced

4 large cloves garlic minced

3 tablespoons red chili paste

2 bay leaves

2-3 tablespoons tomato paste

1 cube not chicken boullion

1 teaspoon paprika

½ teaspoon smoked paprika

1 teaspoon Italian seasoning

1 ½ tablespoons cumin

2 tablespoons chili powder

Pinch of baking soda

1 can black beans

1 can black eyed peas or pinto beans

2 - 15 ounce cans diced tomatoes

1 cup water

1 cup frozen roasted corn

Salt and pepper to taste

2 teaspoons vinegar, lemon or lime juice (I use one vinegar and one lemon)


Garnish:

Fresh cilantro

Jalapeno sour cream

Avocado

Salsa

Tortilla chips

Quick pickled red onions


Instructions:

Heat the oil in a large pot over medium heat. When the oil sizzles add the onion, pepper, carrots and celery, cook for 5-7 minutes stirring frequently until softened. Add the tomato paste, chickenless bouillon, garlic, and all of the spices, heat and stir for 3-5 minutes. Add the beans, tomatoes, water and corn. Cover, reduce the heat to low, and simmer for 23-30 minutes, stirring occasionally, until the chili has thickened. Srir in the lemon, lime or vinegar and adjust seasoning. Garnish with all of your favorite toppings. Enjoy! XOXOXO
