This dressing is so creamy and delicious!! I love it on a kale Caesar salad or drizzled over grilled romaine and sprinkled with homemade sourdough croutons and vegan parmesan. This will keep for 3 days in the refrigerator.

Ingredients: ¼ Cup raw cashews ¼ Cup hemp seeds 2 Tablespoon pumpkin seeds or sesame seeds (or 1 tablespoon tahini) 2 Tablespoons nutritional yeast and / or vegan parmesan Juice of 1 lemon ¼ – ½ Cup water 2 Tablespoons capers with their juice Pinch chili flakes 1 Clove garlic

Preparation: Soak the cashews for a minimum of an hour and up to a day. Rinse and add to food processor. Mix well in food processor or high-speed blender. Add remaining ingredients and mix well. Add a tablespoon of water if too thick. Enjoy!!! XO
