CARROT , COCONUT & GINGER SOUP

This delicious soup is simple to make and will definitely get you glowing! Loaded with vitamin c & beta carotene! Over 30 years ago I read that Jacquelyn Smith ate carrot soup for glowing skin and I have been enjoying this ever since. I've also made this with 3 carrots, 1 small sweet potato and 1 red pepper with great results. Enjoy! XO Ingredients 1-2 tablespoons coconut oil 6 large carrots roughly chopped 1 medium sweet onion 2 cloves of garlic peeled and smashed 2 no-chicken bullion cubes 1 piece kombu (optional) 1 can full fat coconut milk with no added sugar 2 inches of fresh ginger peeled

1/2 teaspoon ginger

1 teaspoon garlic powder

1 teaspoon onion powder

a pinch of cayenne pepper juice of one lime 1 bay leaf (optional) Fresh black pepper and sea salt to taste Directions: Heat the coconut oil in a large soup pan until melted. Cut the ends off of the carrots and roughly chop. Peel and cut onion into large sized chunks. Add the carrots and onion to the pan with the coconut oil. Heat for 4-5 minutes stirring occasionally. Add the smashed garlic and ginger, stir for another minute. Add 3 cups of water, the bullion cube, kombu and simmer for about 25 minutes until the carrots are tender. Transfer half of the mixture to your blender and blend till smooth, being careful not to overfill. Transfer the smooth soup to another pan or bowl and blend the remaining carrot mixture. Pour most of the soup back into the pan and add the coconut milk to the blender. Blend one last time until smooth and return to the pan. Heat through and serve with a squeeze of fresh lime juice and season to taste. Enjoy! XO
